San Marino has an estimated turnover in the olive sector of € 1,274,000 and a production of 700t of fruit, which turns into 90t of Extra Virgin Olive Oil that obtains an average fat yield of 13%.
In this unique country, there is one single mill, responsible for grinding all the fruit produced. It does not have a tradition in table olives, so it does not have any professional table olive factories. It also does not have a pomace treatment industry or refineries.
The per capita consumption of San Marino is comparable to its Italian neighbors. It is around 9.9kg per person per year, which means a total average demand of 300t of oil. Therefore, there is a shortage of 210t that it must acquire mostly from Italy.
